Knedlo is a 4-year-old chimney-cake bakery brand. With our move to the Botanic Seun Myeongdong Hotel, we added brunch, coffee, wood-fired pizza, and Czech draft beer — a place to spend an entire day around fresh-baked bread.
Trdelník is the signature street pastry of Prague — long ribbons of dough wrapped around a wooden spit and slowly rotated over flame, caramelizing as it bakes into a warm, fragrant chimney.
We use French flour, Guérande sea salt, and Isigny A.O.P butter, cold-fermenting our dough for 48 hours and baking each cake to order. One at a time — so the bread you hold is always at its warmest.
By day, fresh Trdelník with hand-drip coffee for brunch. By night, wood-fired pizza with cold Czech draft. The most delicious way to feel Eulji-ro.
